Peanut Butter and Chocolate LOVE

Okay, so I haven't ever really shared recipes with you, but this one kind of spoke to me. It's Valentines Day on Tuesday and just the thought of making something that brings hugs, kisses, and lots of love your way, what could be better??? So are you ready . .. think peanut butter and chocolate. Yummmmmm

Peanut Butter Chocolate Chip Cake

2-1/4 c. all purpose flour

2 c. light brown sugar

1 c. creamy peanut butter

1/2 c. unsalted butter, softened

1 t. baking powder

1/2 t. baking soda

1 c. milk

1 t. vanilla extract

3 eggs

1 c. semisweet chocolate chips (I prefer to use milk chocolate)

Preheat oven to 350 degrees. Coat a 9"x13" baking pan with cooking spray. Set aside.

Using an electric mixer, combine flour, brown sugar, peanut butter, and butter. Remove 1 cup of mixture and set aside.

Mix in baking powder, and baking soda. Mix in milk and vanilla. Add eggs, 1 at a time, mixing well after each addition.

Transfer batter to prepared pan. Sprinkle top with reserved flower mixutre and chocolate chips. Bake 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Why is it that once the Holidays are over, we all seem to find ourselves dreaming about Springtime? I love Winter, but one overwhelming snowstorm truly does get me in the mood for warmer temperatures, bright colors, and flip flops.

Orange and Pink . . . a sweet as sherbet color combination. Not right for everyone, but when it works, watch out. I personally love them; by themselves and together.
